Weekly Recipe - Chinese Orange Chicken
Total Time: 35 mins (Prep 15 / Cook 20)
Ingredients
Chicken: 4 boneless skinless breasts (bite-size pieces), 3 eggs (whisked), ⅓ cup cornstarch, ⅓ cup flour, oil for frying
Sauce: 1 cup orange juice, ½ cup sugar, 2 Tbsp rice or white vinegar, 2 Tbsp soy sauce (or tamari), ¼ tsp ginger, ¼ tsp garlic powder or 2 minced cloves, ½ tsp red chili flakes, zest of 1 orange, 1 Tbsp cornstarch
Garnish: green onions, extra orange zest
Directions
Sauce: In a pot, heat orange juice, sugar, vinegar, soy sauce, ginger, garlic, and chili flakes for 3 min. Mix 1 Tbsp cornstarch with 2 Tbsp water, whisk into the sauce, cook 5 min until thick, then stir in orange zest.
Chicken: Mix flour, cornstarch, and a pinch of salt. Dip chicken in eggs, then flour mix. Fry in 2–3" of 350°F oil for 2–3 min until golden. Drain on paper towels.
Toss chicken with sauce and garnish with green onions and zest. Serve with rice.
