Weekly Recipe - Red Beans & Rice

Ingredients
8 strips bacon
3 cups rice
1–2 cans black or red beans
Chicken stock or water to total 6 cups of liquid (including bean liquid)
½–¾ yellow onion, minced
Garlic salt, pepper, and cayenne pepper (to taste)
Optional toppings: sour cream and hot sauce
Directions
Cook bacon in a large pot until crispy. Remove and crumble if desired; leave the grease.
Add the minced onion to the pot and sauté in the bacon grease until soft.
Drain beans, reserving the liquid in a measuring cup.
Add the rice to the pot and lightly fry it in the bacon grease for a minute or two.
Stir in the beans.
Add the bean liquid plus enough chicken stock or water to reach 6 cups total liquid.
Season with garlic salt, pepper, and cayenne to taste.
Bring to a boil, then stir.
Reduce to a simmer (about medium-low, #2 on many stovetops) and cook until the rice is tender, about 17 minutes.
Serve hot. Top individual bowls with sour cream and hot sauce if desired.
