Weekly Recipe - Red Beans & Rice

 Ingredients

  • 8 strips bacon

  • 3 cups rice

  • 1–2 cans black or red beans

  • Chicken stock or water to total 6 cups of liquid (including bean liquid)

  • ½–¾ yellow onion, minced

  • Garlic salt, pepper, and cayenne pepper (to taste)

  • Optional toppings: sour cream and hot sauce

Directions

  1. Cook bacon in a large pot until crispy. Remove and crumble if desired; leave the grease.

  2. Add the minced onion to the pot and sauté in the bacon grease until soft.

  3. Drain beans, reserving the liquid in a measuring cup.

  4. Add the rice to the pot and lightly fry it in the bacon grease for a minute or two.

  5. Stir in the beans.

  6. Add the bean liquid plus enough chicken stock or water to reach 6 cups total liquid.

  7. Season with garlic salt, pepper, and cayenne to taste.

  8. Bring to a boil, then stir.

  9. Reduce to a simmer (about medium-low, #2 on many stovetops) and cook until the rice is tender, about 17 minutes.

  10. Serve hot. Top individual bowls with sour cream and hot sauce if desired.
