🥢 Easy Peanut Noodles - Weekly Recipe
Ingredients
Rice noodles (any kind)
1 ½ cups peanut butter (smooth or crunchy)
½ tbsp soy sauce
½ tbsp chili crunch oil
1 tsp sugar (to taste)
½ tsp Korean chili flakes
1 cup pasta water (reserved from noodles)
A dash of sesame oil (just a little!)
Optional toppings: crushed peanuts/cashews, chopped green onion
Instructions
Cook noodles until soft.
Save about 1 cup of the pasta water.
In a microwave-safe bowl, mix together all sauce ingredients (except the pasta water).
Microwave the sauce for 25–30 seconds to soften.
Slowly add 2 tablespoons of pasta water, stirring until the sauce reaches your desired thickness.
Toss noodles with the sauce until evenly coated.
Top with crushed nuts and green onions for extra flavor and flair.
