White Chicken Chili - Weekly Recipe

Ingredients:
1¼ lb boneless chicken thighs
10 oz green chili enchilada sauce
8 oz Hatch green chile
2 cans white beans (drained)
2 cups fire-roasted corn
1 tsp oregano
1 tsp paprika
1 Tbsp chili powder
1 Tbsp cumin
Salt & pepper to taste
2 cups chicken bone broth
8 oz cream cheese (softened)
Fresh cilantro (optional)
Juice of 1 lime
Toppings (optional):
Cheddar cheese, sour cream, crushed tortilla chips
Instructions:
Add everything except cream cheese, cilantro, and lime to the crockpot.
Cook on High for 4+ hours.
Remove chicken, shred it, and return it to the pot.
Stir in cream cheese and cook on Low for about 1 hour, until creamy.
Add cilantro and lime juice before serving.
Top with cheese, sour cream, and tortilla chips. Enjoy!
